While most multitrack sequencing programs offer score editing, these functions are usually unequal to the task of creating a proper score for musicians to play. Depending on your needs, you have a large selection of dedicated programs to create all kinds of musical charts.
For a simple lead sheets, the score editing function may indeed be all you need. Make sure that your program has the ability to print the score window. Also make sure that it can display chord symbols, because if it doesn't, your guitarist and pianist may be left to their own devices. If they choose to play different chords, your music may become very interesting! A better solution is one of the entry level notation programs.
Notation programs are actually MIDI sequencers in disguise. They can record in MIDI on to a number of tracks. Depending on the sophistication of the program, there will be some MIDI editing functions as well. The most basic ones will have a limited number of tracks, and may not allow you to edit MIDI data from the score window. You may also be required to manually enter chord symbols. As the programs get more sophisticated, you have more tracks available, with more advanced MIDI editing. Most importantly, better programs have a chord recognition function. This is a great time saver. You simply play the chords on your keyboard, or prerecord a track of just the chords, and the program recognizes them and puts the symbols above the staff.
Another function to look out for is the ability to transpose. Sometimes, a song may change key in the middle. Earlier notation programs of lesser quality had trouble with this. Make sure before you buy that your program is able to handle multiple keys signatures.
The better programs will also give you more options for song structure. Every program has a simple repeat function, but as music becomes more complicated, you may need more repeat options. It's a great opportunity to use all those neat musical symbols!
Another editing function is the ability to display multiple voices. Sometimes, you may have different voices playing on the same staff. Lower-level programs can get confused with these rhythms and eliminate some sustained notes that you really want played.
An important thing to look out for is the program's ability to properly format the score. I've seen programs that put lyrics right on top of notes in such a way that it's impossible to read. The program should be able to properly space notes in a measure according to meter, and to lay out the score and the lyrics and the chord symbols in a legible fashion.
One of the slowest developing functions is the ability to scan music into your computer and translate  it into MIDI. Even the best of these programs will make errors, so be prepared to properly edit by hand after you've scanned the music. Some of the top notation programs include a scanning function.
